Any way to stop theme from affecting certain programs?
My theme is affecting some of office and adobe, but not enough to
make them look right, how do I stop it from affecting a program in general?

Most dark themes will do that. The usual white is a shared color with other places in Windows(like explorer and control panel) so themers change it anyways.
You can quick edit the applied theme in control panel(Control Panel\Appearance and Personalization\Personalization\Window Color and Appearance then click on Advanced appearance settings), select 'Window' in the dropdown list and select the color you want, white. That will change the background color to white in Word, Notepad etc.
